What is the difference between Granite and rhyolite?

Granite forms in intrusive environments (plutons/batholiths/etc), while rhyolite forms in extrusive environments (volcanoes). You can identify a granite because it's crystals are visible to the naked eye while in rhyolite, they're not (though rhyolite may contain the occasional visible phenocryst).
